Ingredients
  

  • 4 pound pork shoulder/ pork butt
  • 1/4 cup olive oil
  • 1 cup brown sugar
  • 1/2 cup BBQ seasoning
  • 1 to 2 tablespoons yellow mustard
  • kosher salt, pepper
  • 1 cup BBQ sauce
  • 1/4 cup honey
  • 3 tablespoons butter cut into smaller pieces

Instructions
 

  • Trim some of the thicker pieces of fat from the pork and cut into 1 to 2 inch cubes.
  • Put the pork cubes in a large bowl and add the olive oil, brown sugar, BBQ seasoning, yellow mustard, kosher salt, and pepper. Toss until evenly coated.
  • Set the smoker or pellet grill to 225 degrees, place the pork bites on the smoker grates for 2 hours, flipping them halfway through.
  • Remove the pork bites and place in a 9x13 foil pan. Add the BBQ sauce, honey, and butter. Toss until evenly combined and cover with foil.
  • Place the covered foil pan back onto the smoker at 225 degrees for 1 1/2 to 2 more hours.
