1cupricotta cheese
1 to 2cupmarinara sauce (use Rao brand for keto friendly)
1cupshredded mozzarella cheese
Optional: parsley or basil for garnish
Instructions
Set a small skillet over medium heat and add the olive oil and diced onion. Cook 3 to 4 minutes. Add the chopped spinach, kosher salt, pepper, and crushed red pepper flakes. Cook 3 to 4 more minutes stirring a few times.
While the spinach cools put the sausage, bread crumbs, garlic, egg, ricotta cheese, kosher salt, pepper, and crushed red pepper flakes in a bowl. Once the spinach is cool add it to the bowl.Note: If the sausage came in casings, remove the casings.
Mix together with your hands until evenly combined. Roll 8 meatballs with your hands and place on a tray.Note: You can roll more smaller meatballs if serving as an appetizer.
Set the smoker or pellet grill to 250 degrees. Place the meatballs on the grates for about 1 hour.
Transfer the meatballs to a tray or dish. Pour the marinara sauce over top and sprinkle the cheese over top. Place back in the smoker for 20 to 30 more minutes.
