- 1 pound salmon skin removed
- 1/4 cup sliced green onions
- 1/4 cup bread crumbs
- 1 egg
- 3 to 4 cloves garlic minced
- kosher salt, pepper, Old Bay seasoning
- cooking oil of choice
- 6 oz sour cream or plain Greek yogurt
- 1 avocado
- 1 tablespoon lime juice
- 4 burger buns
- Optional toppings: lettuce, tomato, onion
Cut the skinless salmon into 2 inch pieces and put them in a food processor and pulse a few times so the salmon comes together but is not completely smooth.
Put the salmon in a bowl along with the green onions, bread crumbs, egg, garlic, kosher salt, pepper, and Old Bay. Gently combine with your hands and form into 4 burger patties.
Preheat the Blackstone griddle to medium low for several minutes. Add some cooking oil of choice and the 4 salmon burgers.
Cook the salmon burgers on the griddle 4 to 5 minutes per side.
Put the sour cream or yogurt, avocado, lime juice, kosher salt, and pepper in a food processor or blender. Blend until smooth.
Serve the salmon burgers on buns with the avocado sauce and optional toppings such as lettuce, tomato, or onion.
