Ingredients
  

  • 1 pound salmon skin removed
  • 1/4 cup sliced green onions
  • 1/4 cup bread crumbs
  • 1 egg
  • 3 to 4 cloves garlic minced
  • kosher salt, pepper, Old Bay seasoning
  • cooking oil of choice
  • 6 oz sour cream or plain Greek yogurt
  • 1 avocado
  • 1 tablespoon lime juice
  • 4 burger buns
  • Optional toppings: lettuce, tomato, onion

Instructions
 

  • Cut the skinless salmon into 2 inch pieces and put them in a food processor and pulse a few times so the salmon comes together but is not completely smooth.
  • Put the salmon in a bowl along with the green onions, bread crumbs, egg, garlic, kosher salt, pepper, and Old Bay. Gently combine with your hands and form into 4 burger patties.
  • Preheat the Blackstone griddle to medium low for several minutes. Add some cooking oil of choice and the 4 salmon burgers.
  • Cook the salmon burgers on the griddle 4 to 5 minutes per side.
  • Put the sour cream or yogurt, avocado, lime juice, kosher salt, and pepper in a food processor or blender. Blend until smooth.
  • Serve the salmon burgers on buns with the avocado sauce and optional toppings such as lettuce, tomato, or onion.
