- 40 cloves garlic (I bought the already peeled garlic cloves in a bag) peeled
- 6 to 8 sprigs fresh thyme
- 3 cups olive oil
Put the garlic cloves and thyme sprigs in a dish safe for the smoker. Pour the olive oil over top.
Set the smoker or pellet grill between 200 to 225 degrees. Place the dish with the garlic oil on the grate for 1 1/2 to 2 hours.
Strain the garlic and thyme from the oil. Store the oil in a jar or bottle in the refrigerator for up to 3 months. Use the oil in recipes or as a bread dip.Note: Blend the smoked garlic cloves with butter, freeze to use in recipes, or serve with bread.
