Equipment

  • Traeger/Pellet Grill
  • Smoker

Ingredients

  • 6 chicken breasts
  • olive oil, Old Bay seasoning, kosher salt, pepper

Instructions

  • Brush olive oil on both sides of the chicken and season both sides with Old Bay, kosher salt, and pepper.
Note: Old Bay has salt in the seasoning so not much kosher salt is needed.
  • Set the smoker or pellet grill to 225 degrees. Place the chicken on the grate for about 1 1/2 hours, flipping halfway through.
Note: Cook time will depend on thickness of the chicken breasts, start monitoring the internal temperature at the one hour mark and remove them once the internal temperature is above 165 degrees.
  • Let the chicken cool slightly and shred it with your hands or dice it. Store in a covered container in the refrigerator and use it on salads, wraps, soups, tacos, or to make chicken salad.
