Blackstone Griddle Shrimp Boil
- 1 pound petite size potatoes (red, gold, or fingerling)
- 1 pound jumbo shrimp (deveined but shells still on)
- 1 package smoked sausage (approx. 1 pound)
- 4 ears corn on the cob shucked
- 3 Tbsps butter
- 1 Tbsp lemon juice
- 1 Tbsp Old Bay seasoning, plus a little more to sprinkle on top)
- Optional: parsley or chives for garnish, melted butter, lemon wedges, and/or Old Bay Aioli for dipping
Old Bay Aioli
- 3/4 cup mayo
- 1 1/2 tsps lemon juice
- 1 1/2 tsps Old Bay seasoning
- a few dashes of your favorite hot sauce
Blackstone Griddle Shrimp Boil
Boil the petite potatoes in salted water for 7-8 minutes. Let them cool slightly and cut them in half.Note: If the potatoes are not petite in size, add a few extra minutes to boiling time. Pat the shrimp dry with paper towels. Cut the smoked sausage into 1 inch pieces. Cut each ear of corn into 2 or 3 pieces.
Preheat the griddle to medium heat. Add 1 tablespoon of the butter and put the potatoes and the corn on the griddle over the melted butter. Cook for 6 to 8 minutes, turning them a few times.
Add the remaining butter, the shrimp and sausage, lemon juice, and Old Bay seasoning. Cook 3 to 4 more minutes, turning a few times using hibachi spatulas.
Use the hibachi spatulas to transfer everything to a large baking sheet or tray. Sprinkle more Old Bay seasoning over top and serve with parsley or chives for garnish, melted butter, lemon wedges, and/or Old Bay Aioli for dipping
