1poundfingerling potatoes (mine were gold and purple)
olive oil, kosher salt, pepper
3Tbspssmoked or roasted garlic (recipe for smoked garlic in post above)
3Tbspsbuttermelted
2Tbspsfresh chopped herbs of choice (I had thyme, rosemary, and chives)
Instructions
Cut the potatoes in half lengthwise and put them in a bowl. Add some olive oil, kosher salt, and pepper and toss them until coated.
Set the Traeger/ pellet grill to 375 degrees. Place the potatoes on the grate for 12 to 14 minutes. Flip them and cook another 12 to 14 minutes.
While the potatoes finish cooking put the smoked or roasted garlic into a blender or food processor. Add the butter and pulse a few times and then stir in the fresh herbs.
Remove the potatoes and put them in a bowl. Add the smoked garlic herb butter. Toss until evenly coated and serve.
