Grilled Char Siu Chicken has a Cantonese BBQ marinade and sauce, super flavorful grilled chicken that's so good served over rice

- 2 pounds boneless skinless chicken thighs (or chicken breast)
- 2 Tbsps hoisin sauce
- 2 Tbsps honey
- 2 Tbsps Shaoxing (Chinese cooking wine, I ordered from Amazon)
- 2 Tbsps oyster sauce
- 2 Tbsps soy sauce
- 1 1/2 Tbsps brown sugar
- 4 cloves garlic finely minced
- 2 tsps ground cinnamon
- 2 tsps Chinese five spice powder
- a few drops red food coloring
- 3/4 cup mayo
- Optional: rice, sriracha
Trim the chicken if needed and place in a gallon size plastic bag.
Add the rest of the ingredients (except the mayo) to a bowl and stir until combined. Put the mayo in a separate bowl and add a few spoonfuls of the char siu sauce, stir and store in the fridge to use as a dipping sauce.
Pour the rest into the bag with the chicken and massage the bag until evenly coated. Marinate in the fridge overnight.
Preheat the grill to medium high heat. Once hot, grill the chicken 5 to 6 minutes per side. Brush with any leftover marinade in the bag only during the first half of cooking time.
Serve with the dipping sauce from earlier and serve with rice and sriracha if desired.
