Equipment

  • Grill

Ingredients

  • 2 pounds boneless skinless chicken thighs (or chicken breast)
  • 2 Tbsps hoisin sauce
  • 2 Tbsps honey
  • 2 Tbsps Shaoxing (Chinese cooking wine, I ordered from Amazon)
  • 2 Tbsps oyster sauce
  • 2 Tbsps soy sauce
  • 1 1/2 Tbsps brown sugar
  • 4 cloves garlic finely minced
  • 2 tsps ground cinnamon
  • 2 tsps Chinese five spice powder
  • a few drops red food coloring
  • 3/4 cup mayo
  • Optional: rice, sriracha

Instructions

  • Trim the chicken if needed and place in a gallon size plastic bag.
  • Add the rest of the ingredients (except the mayo) to a bowl and stir until combined. Put the mayo in a separate bowl and add a few spoonfuls of the char siu sauce, stir and store in the fridge to use as a dipping sauce.
  • Pour the rest into the bag with the chicken and massage the bag until evenly coated. Marinate in the fridge overnight.
  • Preheat the grill to medium high heat. Once hot, grill the chicken 5 to 6 minutes per side. Brush with any leftover marinade in the bag only during the first half of cooking time.
  • Serve with the dipping sauce from earlier and serve with rice and sriracha if desired.
