Pat the catfish dry with paper towels and season very lightly with Old Bay seasoning.
Melt the butter and mix in the lemon, dill, and just a little more old bay.
Preheat the Blackstone Griddle to medium low for several minutes. Pour half of the butter on the griddle and place the catfish over the butter.
Cook the catfish 8 to 10 minutes total flipping a few times. After flipping the first time pour the remaining butter over top of the catfish. Serve with lemon wedges on the side if desired.Note: A vegetable such as broccolini, asparagus, kale, broccoli, or green beans will have a similar cook time and can be cooked on the griddle at the same time and can be seasoned with the same butter if you double the recipe.
