Instructions
Pat the catfish fillets dry very well with paper towels.
Season both sides of the catfish with the blackening or Cajun seasoning, kosher salt, and pepper.
Preheat the Blackstone Griddle to medium low for several minutes. Add cooking oil of choice and place the seasoned catfish over the oil.
Cook the catfish 8 to 10 minutes total, flipping a few times. Toast the buns cut side down on the griddle for a minute if desired.
Serve the blackened catfish on the burger buns with optional toppings such as lettuce, pickle, mayo, store bought remoulade sauce, tartar sauce, and/or spicy mayo.
