4 to 5cupscooked and cooled Jasmine rice (I used a few microwave pouches and cooled in the fridge for a few hours spread out on a tray)
1oniondiced
3eggs
3 to 4tablespoonssoy sauce
3tablespoonsbutter
3tablespoonsJapanese mayo (I used Kewpie)
6 to 7clovesgarlicminced
1bunchgreen onions (or freshly chopped cilantro)sliced into 2 inch pieces
kosher salt, pepper
1tablespoonsesame seeds
Optional: yum yum sauce, sriracha
Instructions
Put all of the ingredients on a tray and head out to your Blackstone Griddle. Preheat the griddle to medium high for several minutes.
Add some cooking oil and spread with hibachi spatulas, add the rice, onion, and eggs. Cook 2 minutes and mix together with hibachi spatulas.
Add the soy sauce, butter, Japanese mayo, and garlic. Mix together with hibachi spatulas and cook for 5 to 6 minutes, flipping the rice over occasionally. For crispy rice, spread the rice even with the hibachi spatulas and press into the griddle slightly.
Add the green onions or cilantro, kosher salt, pepper, and sesame seeds and cook a few more minutes or until the rice is done how you prefer.
Taste for seasoning and add more soy sauce and/or Japanese mayo if needed. Serve with yum yum sauce and/ or sriracha if desired.
