Equipment

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients

  • cooking oil of choice
  • 4 to 5 cups cooked and cooled Jasmine rice (I used a few microwave pouches and cooled in the fridge for a few hours spread out on a tray)
  • 1 onion diced
  • 3 eggs
  • 3 to 4 tablespoons soy sauce
  • 3 tablespoons butter
  • 3 tablespoons Japanese mayo (I used Kewpie)
  • 6 to 7 cloves garlic minced
  • 1 bunch green onions (or freshly chopped cilantro) sliced into 2 inch pieces
  • kosher salt, pepper
  • 1 tablespoon sesame seeds
  • Optional: yum yum sauce, sriracha

Instructions

  • Put all of the ingredients on a tray and head out to your Blackstone Griddle. Preheat the griddle to medium high for several minutes.
  • Add some cooking oil and spread with hibachi spatulas, add the rice, onion, and eggs. Cook 2 minutes and mix together with hibachi spatulas.
  • Add the soy sauce, butter, Japanese mayo, and garlic. Mix together with hibachi spatulas and cook for 5 to 6 minutes, flipping the rice over occasionally. For crispy rice, spread the rice even with the hibachi spatulas and press into the griddle slightly.
  • Add the green onions or cilantro, kosher salt, pepper, and sesame seeds and cook a few more minutes or until the rice is done how you prefer.
  • Taste for seasoning and add more soy sauce and/or Japanese mayo if needed. Serve with yum yum sauce and/ or sriracha if desired.
