4 to 6kabob skewers (if wooden, soak in water for several hours)
Instructions
Cut the steak into inch size cubes and place in a gallon size plastic bag.
In a bowl mix together the olive oil, lime juice, soy sauce, garlic, fajita seasoning, kosher salt, and pepper. Save a few spoonfuls of this mixture for the veggies and pour the rest into the bag with the steak.
Massage the bag until the steak is evenly coated and marinate in the refrigerator for several hours.
Peel the onion and remove the seeds and stems from the peppers. Then cut the onion and peppers into 1 inch pieces (similar in size to the steak). Toss the marinade that was set aside earlier with the onions and peppers.
Assemble the kabobs by alternating steak, onions, and peppers. Pour any extra marinade over top and season with kosher salt and pepper.
Preheat your grill to medium high for several minutes. Grill the steak kabobs 7 to 10 minutes total, flipping and turning several times.
