Traeger Maple Sriracha Bacon

Ingredients
  

  • 3 pounds thick cut bacon
  • 1 1/2 cups brown sugar
  • 2/3 cup pure maple syrup
  • 2 to 4 Tbsps sriracha (more or less depending on spice preference)

Instructions
 

  • Separate the bacon strips and place them in a large bowl.
  • Add the brown sugar, maple syrup, and sriracha to the bowl with the bacon. Use your hands to gently toss the bacon so it's well coated.
  • Turn the Traeger on and set the temp to 225 degrees. Start placing the bacon right away, no need to let it preheat. I found it best to use my hands to place them on the grill grates. Brush any remaining sauce over top of the bacon.
    Note: I have an Ironwood 885 and three pounds of bacon just fit, if you have a smaller Traeger this may need two batches or cut the recipe in half.
  • Let the bacon cook for 50 minutes, flip them, and cook an additional 50 to 70 minutes. This will largely depend on the bacon thickness and how you want them cooked.
    Note: The bacon will be soft and bendable at first, once it cools the bacon will harden.
