Steak with Chipotle Cream Sauce

Steak with Chipotle Cream Sauce is a great, easy recipe for perfectly grilled topped with a smoky, spicy chipotle cream sauce!

Ingredients
  

  • 2 steaks of choice (I used New York Strips)
  • olive oil, kosher salt, pepper, steak seasoning blend of choice (optional)
  • 1 7 oz can chipotle peppers in adobo sauce (you won't use the whole can but this is the only size I found)
  • 2 tablespoons butter
  • 1 1/2 cups half and half
  • 1/2 cup fresh chopped cilantro
  • 1 tablespoon garlic paste or minced garlic
  • 2 teaspoons Dijon mustard

Instructions
 

  • Drizzle both sides of the steaks with olive oil and season well with kosher salt, pepper, and steak seasoning blend of choice if using.
  • Preheat the grill to medium high and place the steaks on the grill for 3 to 5 per side, depending on the thickness of your steaks and how you like them cooked.
    Note: I removed mine from the grill when the internal temp was 135 degrees so they were between medium rare and medium after they rested.
  • After removing the steaks from the grill let them rest while you make the sauce. Finely dice about half the can of chipotle peppers in adobo sauce (more or less depending on your spice preference).
  • Set a small skillet over high heat and add the butter. Once the butter has melted add some of the diced chipotle peppers in adobo sauce, half and half, cilantro, garlic, Dijon mustard, kosher salt, and pepper.
  • Bring the sauce to a boil, watching carefully and if it bubbles up simply remove from the heat for a moment. Once it boils reduce the heat to medium low for 6 to 9 minutes, continuing to stir several times.
    Note: Taste for seasoning during cooking and add more chipotle peppers, kosher salt, and/or pepper if needed.
  • The sauce will thicken as it cooks and will get a little thicker after removing it from the heat. Serve the steaks with the chipotle cream sauce over top.
    Note: I served this with potatoes, the sauce was so good with the potatoes too!
