Smoked BBQ Pork Potato Skins is a great appetizer recipe and the perfect way to use leftover pulled pork on the smoker or pellet grill!

- 4 Russet potatoes
- olive oil, kosher salt, pepper, BBQ seasoning blend
- 2 cups leftover pulled pork (or chicken)
- BBQ sauce
- 2 cups shredded cheese of choice
- Optional toppings: sour cream, chives, jalapenos, sweet pickled red onions (recipe link in post above)
Put the potatoes on a tray, brush them with olive oil and season well on all sides with kosher salt, pepper, and barbecue seasoning.
Set the smoker or pellet grill to 250 degrees and place the potatoes on the grill grate for 2 1/2 to 3 hours, flipping halfway through.
Cut the potatoes in half lengthwise and let them cool. Scoop out the center of each potato, leaving as much or as little potato in the skin as desired.Note: The scooped out potatoes can be used for mashed potatoes or potato cakes. Season the cut side up of each potato skin with more BBQ seasoning. Fill each potato skin with some leftover pulled pork, a drizzle of barbecue sauce, shredded cheese, and more BBQ seasoning.
Place the potato skins back on the smoker still set to 250 degrees for to 25 to 30 minutes or until the cheese is melted.
Top with sour cream, chives, jalapenos, and/or sweet pickled red onions if desired.
