Equipment

  • Blackstone Griddle
  • Flat Top Grill/ Griddle
  • Traeger/Pellet Grill

Ingredients

  • 1/2 pound ground beef
  • burger seasoning blend (I used Blackstone Whiskey Burger seasoning)
  • 8 ounces cream cheese
  • 1 cup shredded cheese of choice
  • 1/3 cup chopped pickles
  • 10 to 12 jalapeno peppers cut in half lengthwise, seeds scraped out
  • 20 to 24 slices regular cut bacon

Instructions

  • Preheat your griddle (or skillet) to medium heat. Add the ground beef and season with your burger seasoning blend. Cook 5 minutes, mixing with spatulas a few times.
  • Put ground beef in a bowl with cream cheese, shredded cheese, pickles, and more burger seasoning. Mix until combined.
  • Put this mixture into the halved jalapeno peppers. Wrap each with a slice of bacon, overlapping slightly. Sprinkle just a little more burger seasoning over top.
  • Place the bacon wrapped stuffed jalapenos on your pellet grill/smoker set to 250 degrees for 2 1/2 hours or until the bacon is cooked how you prefer.

Notes

Pro Tip: Cook the whole pound of ground beef with burger seasoning and use the leftover half pound to make cheeseburger quesadillas on the griddle.
