Preheat your griddle to medium heat. Add cooking oil of choice, potatoes, kosher salt, pepper, and all purpose seasoning. Squirt some water on the potatoes and cover with a melting dome for 6 to 7 minutes. Remove the dome a few times to mix with spatulas and add more water before covering again.
While potatoes are still covered, add more cooking oil to empty space on griddle and add onions and carrots. Cook everything 3 to 4 minutes, mixing onions and carrots a few times and continue to remove dome from potatoes to mix and add more water before covering again.
Set melting dome aside and mix the onions, carrots, and potatoes together for a minute. Add the steak, garlic, kosher salt, pepper, and all-purpose seasoning blend. Cook 3 to 4 minutes, mixing a few times.
While everything is cooking on the griddle, whisk the heavy cream, tomato paste, red wine (if using), Worcestershire sauce, beef gravy packet, thyme, kosher salt, pepper, and all purpose seasoning blend together in a large bowl.
Add the peas and sauce, cook 2 to 3 more minutes on the griddle, mixing it all together. Sauce will thicken as it cooks. Taste for seasoning and add more kosher salt, pepper, and/or all purpose seasoning if needed.
