Blackstone Caramelized Onions and Bacon is perfect for meal prepping on the large griddle space, I made several dishes with these!!

Flat Top Grill/ Griddle
- cooking oil of choice
- 4 to 6 yellow onions thinly, evenly sliced (I used my mandolin)
- kosher salt, pepper, crushed red pepper flakes
- 1 pound bacon
- 3 tablespoons butter
- 1 1/2 tablespoons brown sugar
- 1 1/2 tablespoons balsamic vinegar
Preheat your griddle to medium low. Add cooking oil, onions, kosher salt, pepper, and crushed red pepper flakes to one side of griddle. Use kitchen scissors to cut the bacon into bite size pieces on other side of griddle.
Cook both, separately, for 20 to 25 minutes, mixing a few times. Raise heat slightly if not cooking fast enough, lower slightly if cooking too fast.
Add butter, brown sugar, and balsamic vingar to the onions. Cook another 5 to 10 minutes. Remove once cooked how you prefer.Note: I stored mine in containers in the fridge for a few days, see post above for several yummy dishes that I made with these.
