- cooking oil of choice
- 1 1/2 pounds boneless, skinless chicken thighs cut into bite size pieces
- kosher salt, pepper, taco or fajita seasoning blend of choice
- 8 ounces chorizo
- 2 to 3 cups fresh pineapple chunks
- 3 (8.5-ounce) pouches microwavable rice (cilantro lime or Mexican flavor)
- 1 cup queso warm
- Optional: lime wedges, cilantro, hot sauce, pickled jalapenos
Preheat griddle to medium. Add chicken and season with kosher salt, pepper, and taco or fajita seasoning blend. Add chorizo and pineapple to griddle as well.
Cook 8 to 10 minutes, mixing together a few times with spatulas and breaking apart the chorizo.
Microwave rice according to package directions or add rice to empty space on griddle during the last 3 minutes. Add some water and cover with melting dome, breaking apart with spatulas.
Serve chicken, chorizo, and pineapple mixture over rice and drizzle queso over top. Add toppings such as lime wedges, cilantro, hot sauce, and/or pickled jalapenos if desired.
