- 6 to 8 slices bacon cut into bite size pieces
- 1 1/2 pounds boneless, skinless chicken thighs cut into bite size pieces
- kosher salt, pepper, dry ranch seasoning blend
- 1/3 cup ranch dressing
- 8 soft taco size flour tortillas
- Toppings of choice such as shredded lettuce, cheese, cilantro, jalapenos, avocado
Preheat griddle to medium-low. Add bacon and cook 2 to 3 minutes, mixing with spatulas a few times.
Add chicken, kosher salt, pepper, and ranch seasoning. Cook 8 minutes on the griddle, mixing together with the bacon. Drizzle ranch over top and mix together during the last minute.Note: No need to add oil because of the bacon grease. Place tortillas on griddle for a minute until warm. Serve chicken mixture in the tortillas with toppings of choice such as shredded lettuce, cheese, cilantro, jalapenos, and/or avocado if desired.
