Ingredients
  

  • 2 tablespoons olive oil, plus more for cooking
  • 2 tablespoons lime juice
  • 2 tablespoons hot honey
  • 1 tablespoon Dijon mustard
  • kosher salt, pepper, all-purpose seasoning of choice (I used Blackstone All-Purpose seasoning)
  • 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
  • 4 ears corn on the cob kernels cut off the cob
  • 2 small zucchini (or one larger zucchini) sliced into half circles, 1/4 inch thick
  • 6 cloves garlic minced
  • 1/2 cup crumbled feta cheese
  • fresh chopped basil

Instructions
 

  • Put the olive oil, lime juice, hot honey, Dijon mustard, kosher salt, pepper, and all-purpose seasoning in a bowl and whisk until combined.
  • Preheat your Blackstone griddle to medium heat. Add olive oil (or cooking oil of choice), chicken, corn kernels, zucchini, kosher salt, pepper, and all-purpose seasoning. Cook 5 minutes, mixing with spatulas a few times.
  • Add garlic and cook 4 to 5 more minutes, mixing together. Add the hot honey lime dressing, toss until combined and remove from griddle.
  • Serve topped with feta cheese and fresh basil.
