Equipment

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients

  • 1 pint strawberries
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon sugar
  • kosher salt, pepper
  • 1 (8-ounce) block feta cheese
  • 1 tablespoon all purpose flour
  • 1 egg
  • 1/2 cup panko breadcrumbs
  • 1 (16-ounce) loaf French baguette sliced
  • cooking oil of choice (I used olive oil)
  • 1 tablespoon balsamic glaze
  • 1/4 cup sliced, fresh basil

Instructions

  • Cut strawberries into small pieces, stems removed, and place in a bowl. Add balsamic vinegar, sugar, and a pinch of kosher salt and pepper. Stir until combined.
  • Cut the block of feta in half, lengthwise, so you create two thinner blocks of feta (picture example in post above). Sprinkle the flour on both sides of the feta and rub until it's a thin, even layer on both sides.
  • Crack the egg in one shallow dish and beat with a fork, put the panko in another shallow dish. Place all ingredients on a tray to carry outside to the Blackstone.
  • Preheat griddle to medium heat. Add plenty cooking oil of choice and the sliced baguette, flipping them to coat both sides with oil. Sprinkle kosher salt and pepper on the slices of bread and cook them 3 to 4 minutes or until toasted to your liking, remove and set aside.
  • Add more cooking oil to griddle, dip the feta into the egg on both sides, then into the panko to coat both sides. Place feta blocks on griddle and cook 3 minutes.
Note: Add more oil to griddle if needed to properly shallow fry the feta.
  • Flip feta and add the balsamic strawberries to empty space on griddle. Cook both 3 minutes, mixing the strawberries a few times.
  • Place feta on a tray with the toasted baguette slices. Add some of the strawberries to top the crispy feta and put remaining strawberries in a dish on the side.
  • Drizzle balsamic glaze over top and garnish with basil. Serve right away while feta is still warm. Use a serving knife to top the toasted bread with feta and balsamic strawberries.
