Ingredients
  

  • cooking oil of choice
  • 3 to 4 ears corn on the cob kernels cut off of cobs
  • 4 chicken breasts (mine weren't thin, but not real thick)
  • kosher salt, pepper, taco seasoning of choice
  • 1/2 cup fresh chopped cilantro
  • 2 to 3 tablespoons mayo
  • 2 to 3 tablespoons sour cream
  • 1 lime cut into wedges
  • 1/2 to 1 cup guacamole (store-bought or link to my homemade recipe in post above)
  • Toppings of choice: cotija cheese, cilantro, more taco seasoning, pickled red onions

Instructions
 

  • Preheat your Blackstone griddle to medium. Add cooking oil of choice and then corn on one side of griddle, chicken on the other side. Season both corn and chicken with kosher salt, pepper, and taco seasoning blend.
  • Cook both for 8 to 10 minutes, mixing and flipping a few times. Remove chicken. Add cilantro, mayo, sour cream, and the juice of 1 lime wedge to the corn, mix for a minute and remove.
  • Serve the chicken topped with guacamole and the street corn with remaining lime wedges on the side. Add additional toppings such as cotija cheese, cilantro, more taco seasoning, and/or pickled red onions.
