kosher salt, pepper, buffalo or sriracha seasoning blend of choice (I used Blackstone Pineapple Sriracha seasoning)

Instructions
Preheat the griddle to medium. Add cooking oil of choice, chicken, kosher salt, pepper, and seasoning blend of choice. Cook 6 to 7 minutes, mixing with spatulas a few times.
While chicken is cooking mix hot honey, spicy mayo, sriracha, kosher salt, and pepper together in a small bowl. Add half of this to the chicken, mix with spatulas, and cook chicken 2 to 3 more minutes.
Serve with the remaining sauce for dipping or serve over rice, as a chicken wrap, or top a salad with extra sauce drizzled over top.Note: If making a salad with these, the extra sauce is great mixed with some ranch dressing!
