- 6 tablespoons butter
- 1 (20-ounce) package cheese tortellini uncooked, thawed
- 1 pound jumbo shrimp peeled and deveined
- kosher salt, pepper, seasoning blend of choice (I used Blackstone All-Purpose, Honey Jalapeno, and Parmesan Ranch seasonings)
- hot honey, buffalo sauce, ranch dressing (to taste)
- 1 lemon cut into wedges
Preheat your griddle to medium heat. Add 2 tablespoons of the butter and tortellini. Squirt some water and cover with a melting dome for 5 minutes. Remove the dome a few times to mix with spatulas and add more water before covering again.
Set melting dome aside. Add remaining butter to empty space on griddle. Once melted add shrimp and season both the shrimp and tortellini with kosher salt, pepper, and any seasoning blends that you love.
Cook 2 to 3 minutes, mixing the shrimp and tortellini, keeping them separate. Then mix them together and add the hot honey, buffalo sauce, and ranch dressing (amount depends on your preference, you can always add more of any of them if needed).
Mix together with spatulas and cook 2 to 3 more minutes. Squeeze 2 of the lemon wedges over top and mix together right before serving. Serve with more of the buffalo sauce and ranch drizzled over top with the remaining lemon wedges.
