- cooking oil of choice
- 2 pounds boneless, skinless chicken thighs cut into bite size pieces
- kosher salt, pepper, all-purpose seasoning blend of choice (I used both the Blackstone All Purpose seasoning and Honey Jalapeno seasonings)
- 3 to 4 tablespoons hot honey
- 3 to 4 tablespoons mustard of choice (yellow, Dijon, or spicy)
- 3 to 4 tablespoons mayo or plain Greek yogurt
Preheat your griddle to medium heat. Add cooking oil of choice, the chicken, kosher salt, pepper, and seasoning blend. Cook 6 minutes, mixing a few times.
While chicken cooks mix the hot honey, mustard, mayo, kosher salt, and pepper in a small bowl.
Add half of the sauce to the chicken and cook another 2 to 3 minutes, mixing together.
Serve the chicken bites with remaining sauce for dipping. Or make a salad or wrap with the chicken and serve with extra sauce as the dressing.
