Ingredients
  

  • cooking oil of choice
  • 1 small red onion sliced
  • 1 red bell pepper sliced
  • kosher salt, pepper, Caribbean Jerk seasoning blend (I used Blackstone Island Stir Fry seasoning)
  • 1 1/2 cups fresh pineapple chunks
  • 1 pound jumbo shrimp peeled and deveined
  • 1 cup fresh chopped cilantro
  • 1 bunch green onions sliced into 2-inch pieces
  • 4 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice

Instructions
 

  • Preheat your griddle to medium. Add cooking oil, onion, red pepper, kosher salt, pepper, and Caribbean or Island seasoning. Cook 4 minutes, mixing a few times.
  • Add pineapple and cook 2 more minutes, mixing with spatulas.
  • Add shrimp, cilantro, green onions, garlic, soy sauce, lime juice, and more Caribbean or Island seasoning. Cook 3 to 4 more minutes, mixing with your spatulas.
