- 1 cup dry orzo pasta
- cooking oil of choice
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- kosher salt, pepper, Italian seasoning blend
- 1 pound ground Italian sausage
- 6 to 8 cloves garlic minced
- 1 (24-ounce) jar marinara sauce
- Toppings: grated parmesan cheese, fresh chopped basil
Boil the orzo according to package directions (mine took 9 minutes), drain, rinse with cold water, and set aside.
Preheat your griddle to medium. Add cooking oil of choice, red and yellow peppers, kosher salt, pepper, and Italian seasoning. Cook 2 minutes, mixing with spatulas.
Add Italian sausage to empty space on griddle. Cook both sausage and peppers for 5 minutes, breaking apart the sausage, and continue mixing peppers.
Combine sausage and peppers on the griddle, then add the cooked orzo and garlic. Mix everything together on the griddle for 2 minutes. Add marinara sauce, kosher salt, pepper, and Italian seasoning and cook another 2 minutes, mixing together.
Serve topped with parmesan cheese and fresh chopped basil.
