Ingredients
  

  • cooking oil of choice
  • 1 pound ground beef
  • kosher salt, pepper, taco or fajita seasoning blend
  • 6 to 8 yellow corn tortillas cut into inch size pieces or strips
  • 2 (10-ounce) cans green enchilada sauce
  • 1 (4-ounce) can green chiles
  • 1 (14-ounce) can corn drained
  • 1 (14-ounce) can black beans drained and rinsed
  • 1/2 cup sour cream
  • 2 cups shredded cheese of choice
  • Optional: hot sauce, Fritos or totilla chips

Instructions
 

  • Preheat your Blackstone griddle to medium heat. Add cooking oil, ground beef, kosher salt, pepper, and taco or fajita seasoning. Cook 5 to 6 minutes, breaking it apart with spatulas.
  • Add the tortillas, enchilada sauce, green chiles, corn, black beans, sour cream, more kosher salt, pepper and taco or fajita seasoning. Mix together and cook on the griddle for 2 to 3 minutes.
  • Add half of the cheese, mix together, and top with remaining cheese. Remove the dish once cheese is melted (I just scooped mine onto a tray straight from the griddle).
  • Top with hot sauce and Fritos or crushed tortilla chips if desired.
