kosher salt, pepper, taco or fajita seasoning blend
6 to 8yellow corn tortillascut into inch size pieces or strips
2(10-ounce) cansgreen enchilada sauce
1(4-ounce) cangreen chiles
1(14-ounce) cancorndrained
1(14-ounce) canblack beansdrained and rinsed
1/2cupsour cream
2cupsshredded cheese of choice
Optional: hot sauce, Fritos or totilla chips
Instructions
Preheat your Blackstone griddle to medium heat. Add cooking oil, ground beef, kosher salt, pepper, and taco or fajita seasoning. Cook 5 to 6 minutes, breaking it apart with spatulas.
Add the tortillas, enchilada sauce, green chiles, corn, black beans, sour cream, more kosher salt, pepper and taco or fajita seasoning. Mix together and cook on the griddle for 2 to 3 minutes.
Add half of the cheese, mix together, and top with remaining cheese. Remove the dish once cheese is melted (I just scooped mine onto a tray straight from the griddle).
Top with hot sauce and Fritos or crushed tortilla chips if desired.
