- 1/2 cup mayo
- 1/2 cup sour cream
- 1 tablespoon garlic paste or minced garlic
- 1 teaspoon chili powder
- 1 teaspoon lime juice
- 1/4 teaspoon ground red pepper
- kosher salt, pepper
- 4 thin cut boneless, skinless chicken breasts or thighs
- 4 ears corn on the cob shucked
- cooking oil of choice
- 1/2 cup crumbled cotija cheese
- 1/2 cup chopped cilantro
- lime wedges, Tajin seasoning
Put the mayo, sour cream, garlic, chili powder, lime juice, ground red pepper, kosher salt, and pepper in a bowl. Stir until evenly mixed.
Place the chicken breasts in a gallon size plastic bag, add a few spoonfuls of the mayo mixture to the bag. Massage the bag until the chicken is evenly coated.
Preheat your Blackstone griddle to medium heat. Add cooking oil on entire griddle, place corn on the cob and chicken, and season chicken with more kosher salt and pepper. Cook both about 10 minutes, flipping both chicken and corn a few times.
Remove the chicken and corn from the griddle. Let the corn cool slightly and cut the kernels off the cobs.
Put the corn kernels in a bowl and add remaining mayo mixture, cotija cheese, and cilantro. Stir until evenly mixed.Note: Add the mayo mixture a little at a time until it's the right consistency for your taste, you may not use all of the mayo mixture. Serve the chicken topped with the street corn, with lime wedges and Tajin to add over top.
