Flat Top Grill/ Griddle
- 1/2 cup mayo
- 1/4 cup sour cream
- 1 tablespoon lime juice
- kosher salt, pepper, taco seasoning blend (I used both Blackstone Street Taco seasoning and Tequila Lime seasoning)
- hot sauce of choice
- cooking oil of choice
- 2 ears corn on the cob kernels cut off the cob
- 1 (30-ounce) package frozen mini corn dogs (about 35 to 40 mini corn dogs) thawed
- Toppings: cotija cheese, fresh cilantro, pickled red onions, lime wedges
Put the mayo, sour cream, lime juice, kosher salt, pepper, taco seasoning, and hot sauce in a bowl and stir until combined. Put in a squeeze bottle if you have one (if camping do this at home to easily bring with you).
Preheat your Blackstone to medium/ medium-low heat. Add cooking oil on entire griddle. Put corn, kosher salt, pepper, taco seasoning on one side. And mini corn dogs on other side, season with taco seasoning.
Cook both corn and corn dogs for 8 to 10 minutes, mixing corn and turning corn dogs several times. Add some of the sauce to the corn during the last minute and mix until combined.
Put corn dogs on serving platter, top with the corn and then drizzle sauce over top and add toppings such as cotija cheese, fresh cilantro, pickled red onions, lime wedges, and more taco seasoning.
