Blackstone Maple Mustard Chicken Sausage is a great fall dinner recipe for the griddle with sweet potatoes and apples for a complete meal!

Ingredients
  

  • cooking oil of choice
  • 1 large sweet potato cut into inch pieces, skin on
  • kosher salt, pepper, seasoning blend of choice (I used Blackstone All-Purpose and Lumberjack seasoning blends)
  • 1 red onion cut into inch pieces
  • 1 pound cooked chicken sausage links sliced
  • 1 large Honeycrisp apple cut into inch pieces, skin on
  • 1/4 cup pure maple syrup
  • 1/4 cup Dijon mustard
  • 1 tablespoon fresh thyme leaves (optional)
  • crushed red pepper flakes (optional)

Instructions
 

  • Preheat griddle to medium. Add cooking oil, sweet potatoes, kosher salt, pepper, seasoning blend of choice, and squirt some water over top. Cover with melting dome for 8 to 9 minutes. Remove dome a few times to mix with spatulas and add more water before covering again.
  • During the last two minutes, add some cooking oil to empty space on griddle and add the onions, mixing a few times with spatulas.
  • Set melting dome aside and mix together the onions and sweet potatoes on the griddle with spatulas. Add the chicken sausage, apples, more kosher salt, pepper, and seasoning blend of choice. Cook 5 to 6 minutes, mixing a few times.
  • Mix the maple syrup and mustard in a bowl with fresh thyme and crushed red pepper flakes if using. Pour over the chicken sausage mixture on the griddle and cook 2 more minutes, mixing a few times.
