Ingredients
  

  • cooking oil of choice
  • 1 onion diced
  • 8 ounces sliced mushrooms
  • 2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
  • kosher salt, pepper, Italian seasoning
  • 6 cloves garlic minced
  • 8 ounces chopped fresh spinach
  • 1/2 cup sliced sun-dried tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded parmesan cheese
  • 1 pint heavy cream
  • Optional: basil for garnish

Instructions
 

  • Preheat your Blackstone to medium heat. Add cooking oil of choice, onions, mushrooms, chicken, kosher salt, pepper, and Italian seasoning. Cook 6 to 7 minutes, mixing with spatulas a few times.
  • Add garlic and spinach, cook 2 to 3 more minutes.
  • Add sun-dried tomatoes, mozzarella, parmesan, and heavy cream. Mix with spatulas, containing the cream until it thickens into a sauce. Add more kosher salt, pepper, and Italian seasoning and cook 1 more minute.
  • Garnish with basil if desired.
