Blackstone Griddle
Flat Top Grill/ Griddle
- 6 small frozen chicken tenders (or 3 larger tenders to cut in half after cooking, I used Tyson brand)
- 1/2 pound bacon
- 2 peaches diced, skin on
- 1 (6-count) package St. Pierre Belgium Waffles (or 6 small Belgium waffles of choice)
- 1/3 cup maple syrup (plus more to drizzle over top)
- 3 tablespoons butter
- kosher salt, pepper, crushed red pepper flakes
Cook the chicken tenders according to package directions in the oven or air fryer (I used the air fryer in my Blackstone) while you prepare the peach maple bacon jam.
Preheat your Blackstone griddle over medium heat. Use kitchen scissors to cut the bacon into bite size pieces and add bacon to griddle.
Cook 4 to 5 minutes, until the bacon is almost cooked through, soak up some of the grease with paper towels. Add the peaches and cook with the bacon for 3 to 4 minutes. Place the waffles on an empty space on the griddle, flip them a few times and remove once warm and toasty.
Add the maple syrup, butter, kosher salt, pepper, and crushed red pepper flakes to the peaches and bacon. Cook 3 to 4 minutes and remove with spatulas or a small scoop into a bowl.
Assemble the chicken and waffles with the crispy chicken tenders on each waffle. Top with the peach maple bacon jam and more maple syrup if desired.
