Equipment

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients

  • cooking oil of choice
  • 4 medium size smoked/ cooked sausage links (any flavor of choice, I used Teton Waters Ranch Polish Sausages) diced
  • 1 to 2 jalapeno peppers diced
  • 5 eggs
  • 1/4 cup milk or heavy cream
  • kosher salt, pepper, seasoning blend of choice (optional)
  • 4 large burrito size flour tortillas
  • 2 cups shredded pepper jack cheese
  • Optional: hot sauce or taco sauce of choice, cilantro

Instructions

  • Preheat your griddle to medium. Add cooking oil, diced sausages, and jalapenos. Cook 5 minutes, mixing a few times.
  • Crack the eggs in a bowl, add milk or cream, and beat with a fork. Pour the beaten eggs over the sausage and jalapenos and season with kosher salt, pepper, and seasoning blend (if using).
  • Cook about 3 to 4 minutes, mixing and scrambling together. Remove from griddle and lower griddle heat to medium low.
  • Assemble burritos with sausage, egg, jalapeno mixture in the center of each tortilla, add cheese, and roll them into burritos.
  • Add more cooking oil to griddle and place burritos seam side down. Cook them for a minute or two per side or until golden and toasted to your preference. Serve with hot sauce or taco sauce and cilantro if desired.
