Ingredients
  

  • cooking oil of choice
  • 1 1/2 pounds boneless, skinless chicken thighs cut into bite size pieces
  • kosher salt, pepper, buffalo or sriracha seasoning blend of choice (I used Blackstone Pineapple Sriracha seasoning)
  • 3 tablespoons hot honey
  • 3 tablespoons spicy mayo
  • 2 tablespoons sriracha
  • 1 (9-count) package pretzel slider buns (I used King's Hawaiian)
  • 4 to 6 slices pepper jack cheese
  • 3/4 cup crushed Flamin' Hot Cheetos

Instructions
 

  • Preheat the griddle to medium. Add cooking oil of choice, chicken, kosher salt, pepper, and seasoning blend of choice. Cook 6 minutes, mixing with spatulas a few times.
  • While chicken is cooking mix hot honey, spicy mayo, sriracha, kosher salt, and pepper together in a small bowl. Add half of this to the chicken, mix with spatulas, and cook chicken 2 more minutes. Turn griddle off.
  • Add cooking oil to empty side of griddle and place pretzel buns cut side down for a few seconds to toast them.
  • Flip bottom bun over on griddle and add chicken, remaining sriracha honey sauce, slices of pepper jack cheese (overlapping slightly), crushed hot Cheetos, and top bun. Cover with melting dome or lid until cheese is melted. Slice and serve.
