taco seasoning (I used 3 taco seasoning packets plus Blackstone Tequila lime seasoning)

Instructions
*I made this on my 36 inch Blackstone griddle, smaller griddles you may need to adjust this recipe and cook in two batches*Preheat your griddle to medium heat. Add cooking oil of choice and sweet potatoes on one side of griddle, Russet potatoes on other side. Season both with kosher salt and pepper, mix with spatulas then add water to each and cover with a large melting dome, lid, or I used two smaller melting domes.
Cook 7 to 8 minutes under the melting domes, remove domes a few times to mix with spatulas, and add more water before covering again.
Set melting domes aside and scoot the potatoes to the edge of the griddle, keeping them separate.
Add more cooking oil to griddle and then the ground meat and the sweet peppers, keeping them separate.
Season the ground meat with taco seasoning (I also seasoned my peppers and both potatoes with some Tequila Lime taco seasoning).
Cook everything for 7 to 8 minutes, mixing each with spatulas a few times. Add some water to the ground meat halfway through (about 1/4 cup).
Taste for seasoning and add taco seasoning, kosher salt, and/or pepper as needed. Pack everything up in containers with lids and use in several meals throughout the week (4 meal ideas in post above).
