1sweet potato (a longer, thinner sweet potato would be ideal)
6mini sweet peppers
cooking oil of choice
1/2poundground turkey(or cook the whole pound and use leftovers for taco salads)
kosher salt, pepper, taco seasoning blend
1cupshredded cheese of choice
1/4cupsour cream (or see post above for my High Protein Avocado Cilantro Lime Sauce)
Toppings of choice: hot sauce, pickled onions, cilantro
Instructions
Slice the sweet potato (skin on) with a sharp knife, aiming for thin, even slices. Slice the sweet peppers, discard stems.
Preheat your griddle to medium. Add cooking oil of choice and lay the sweet potato slices on one side of griddle, season with kosher salt, pepper, and taco seasoning.Note: Adding the sweet potatoes and seasoning them first allows them the few extra minutes they need so everything is done at once.
Add cooking oil to other side of griddle and add sweet peppers to one space and ground turkey to another space. Season both with kosher salt, pepper, and taco seasoning.
Cook everything for 8 to 10 minutes, mixing the turkey and peppers, and flipping the sweet potatoes a few times, keeping all three separate.Note: Taste turkey for seasoning and add more taco seasoning if needed, if turkey looks dry squirt some water to mix in as it cooks on the griddle.
Assemble the nachos with the sweet potatoes in a basket or on a tray, half of the cheese, then the taco meat and peppers, and remaining cheese. Microwave for a minute to melt cheese if desired.
Drizzle sour cream or High Protein Avocado Cilantro Lime Sauce over top and add toppings of choice such as hot sauce, pickled onions, and/or cilantro.
