Blackstone Tequila Lime Shrimp Bowls

Blackstone Tequila Lime Shrimp Bowls is a healthy meal on the flat top griddle with vegetables, rice, and seasoned tequila lime honey shrimp!

Equipment

Ingredients
  

  • cooking oil of choice
  • 1 pound jumbo shrimp peeled and deveined
  • 4 cups shredded veggie mix, broccoli slaw mix, or salad kit blend (my mix from the produce section had red cabbage, kale, green onions, and carrots)
  • 1 to 2 teaspoons tequila lime seasoning blend (I used the Blackstone Tequila Lime Seasoning)
  • kosher salt, pepper
  • 2 tablespoons hot honey
  • 4 cups cilantro lime rice (I used 2 microwave pouches, see note section below for cooking options)
  • 4 lime wedges
  • Optional toppings: fresh cilantro, sliced avocado, more hot honey

Instructions
 

  • Preheat griddle to medium. Add cooking oil of choice to entire griddle, place shrimp on one side and veggie mix on other side (and rice if cooking on the griddle). Season both shrimp and veggies with tequila lime seasoning, kosher salt, and pepper.
  • Cook both 4 minutes, mixing a few times. Remove veggies and add hot honey to the shrimp, mix 1 more minute.
  • Assemble 4 bowls with rice, then add shrimp and veggie mix. Serve with a lime wedge to squeeze over top and add fresh cilantro, avocado, and/or more hot honey if desired.

Notes

You can microwave rice pouches according to package directions or add the rice to the griddle at the same time as the shrimp and veggies. Add some water, cover with melting dome, and remove the dome a few times to mix the rice, adding more water if needed, and cook 4 to 5 minutes.
