1/3cupteriyaki sauce (I used Kikkoman with no high fructose corn syrup)
2tablespoonssoy sauce
5 to 6clovesgarlicminced
1tablespoongrated ginger or ginger paste (optional)
cooking oil of choice
8ouncessliced mushrooms
1onionsliced
kosher salt, pepper, crushed red pepper flakes
1zucchinisliced
Optional: yum yum sauce, sriracha
Instructions
Put the shrimp in a bowl and pat them dry well with paper towels. Add the teriyaki sauce, soy sauce, garlic, and ginger (if using). Toss until combined.
Preheat the griddle to medium heat for a few minutes. Add some cooking oil of choice along with the mushrooms, onions, kosher salt, pepper, and crushed red pepper flakes.
Cook the veggies 4 to 5 minutes, mixing together with hibachi spatulas.
Add the shrimp with the marinade and zucchini, cook 4 to 5 more minutes mixing together with hibachi spatulas. Serve with yum yum sauce and/or sriracha if desired.
