Ingredients

  • 4 pounds jumbo split chicken wings
  • olive oil, kosher salt, pepper
  • 1/3 to 1/2 cup wasabi sauce (or 1/2 to 1 tablespoon wasabi paste mixed with 1/3 cup mayo)
  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 3 tablespoons ginger paste or grated ginger
  • 1 tablespoon garlic paste or minced garlic

Instructions

  • Pat the wings dry with paper towels and put them in a bowl. Drizzle olive oil and season with kosher salt and pepper and toss the wings until evenly coated.
  • Set your smoker or pellet grill to 250 degrees. Place the wings on the grate for 2 to 2 1/2 hours, flipping halfway through.
  • While the wings are on the smoker, put the wasabi sauce, soy sauce, honey, ginger, and garlic in a saucepan. Bring to a boil then reduce the heat to simmer for 2 to 3 minutes stirring a few times.
  • Brush the wings on all sides with the Wasabi Ginger sauce during the last 10 minutes on the smoker or pellet grill.
  • Serve the wings with any leftover Wasabi Ginger sauce and garnish with sesame seeds and/or chives if desired.
