Blackstone Griddle Street Corn
I’ve got two versions of Blackstone Griddle Street Corn… one is right here and the other, more authentic version, is in my “I Love My Blackstone Griddle” Cookbook.
We used this is a taco topping, but it can also be served as a side dish.
This version uses crema and the Blackstone Street Taco seasoning.

How to make Blackstone Griddle Street Corn
First preheat your Blackstone or flat top griddle to medium heat.
Add some cooking oil and the corn kernels that have been cut off 6 to 8 ears corn on the cob.
Also a diced onion, kosher salt, pepper, and some taco seasoning blend.
Cook this for 6 minutes, mixing with spatulas a few times.

Then add some minced garlic and fresh cilantro.
Mix together and continue cooking for another 3 to 4 minutes.

A squeeze of fresh lime juice is a must.

Then pour a jar of Mexican crema over top.
Combine and cook another minute or two.

Top Blackstone Griddle Mexican Street Corn with cotija cheese and more cilantro 🙂
I also did a little post dust of more taco seasoning.
Serve on tacos or as a side dish!

Blackstone Griddle Street Corn
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 6 to 8 ears corn on the cob kernels cut off the cob
- 1 onion diced
- kosher salt, pepper, taco seasoning blend of choice
- 6 cloves garlic minced
- 1 cup chopped cilantro
- 2 limes cut into wedges
- 1 (15-ounce) jar Mexican crema
- 4 ounces cotija cheese crumbled
Instructions
- Preheat your griddle to medium heat. Add some cooking oil, the corn kernels, onion, kosher salt, pepper, and taco seasoning blend to taste. Cook 6 minutes, mixing with spatulas a few times.
- Add garlic and most of the cilantro. Cook 3 to 4 more minutes, mixing a few times.
- Squeeze some of the lime wedges over top and add the jar of crema. Mix together another minute with spatulas until combined.
- Serve topped with remaining cilantro, cotija cheese, more taco seasoning, and with remaining lime wedges on the side.
