Smoked Meatballs with Burrata Cheese

My grandson had the day off of kindergarten and we did alllll the fun things including making Smoked Meatballs with Burrata Cheese.

He absolutely LOVES to cook with his GiGi!

These got a great kiss of wood fired flavor thanks to the Traeger pellet grill.

We made meatball subs with them, although they are great just by themselves or over pasta.

How to make Smoked Meatballs with Burrata Cheese

First put a little over a pound of ground beef into a bowl.

Then add parmesan cheese, panko breadcrumbs, an egg, garlic, and a small chopped onion.

Season with kosher salt, pepper, Italian seasoning, and a garlic herb seasoning blend.

Go in with your hands if you’re brave enough 😉

Mix gently until it’s combined.

Roll into about 10 meatballs.

My grandson was not so excited about this part… but he managed to get up the courage to roll one meatball.

Next, place the meatballs on the Traeger pellet grill or your smoker set to 250 degrees.

After about 50 minutes to an hour they are smoky and looking fabulous!

Transfer them to a cast iron skillet and add marinara sauce, parmesan cheese, and torn pieces of burrata cheese.

Plus a little more seasonings.

Back into the smoker or pellet grill for another 15 minutes or so until the cheese is melted.

Smoked Meatballs with Burrata Cheese

Smoked Meatballs with Burrata Cheese is a simple recipe for meatballs on the Traeger pellet grill or smoker, perfect for pasta or subs!

  • Traeger/Pellet Grill

Ingredients
  

  • 1 1/4 pounds ground beef
  • 1/2 cup shredded parmesan cheese (plus more to sprinkle over top)
  • 1/3 cup panko breadcrumbs
  • 1 small onion finely diced
  • 5 cloves garlic finely minced
  • 1 egg
  • kosher salt, pepper, Italian seasoning, garlic and herb seasoning blend (I used Kinders)
  • 1 (24-ounce) jar marinara sauce
  • 8 ounces burrata cheese
  • Optional: parsley, crushed red pepper flakes

Instructions
 

  • Put the ground beef, parmesan, panko, onion, garlic, egg, kosher salt, pepper, Italian seasoning, and garlic herb seasoning in a bowl. Combine gently with your hands and roll into 10 meatballs.
  • Set your smoker or pellet grill to 250 degrees. Place meatballs on grill grate for 50 minutes to 1 hour.
  • Transfer meatballs to a cast iron or casserole dish. Pour marinara sauce over top, tear the burrata cheese and place over top, add more parmesan cheese, kosher salt, pepper, Italian seasoning, and garlic herb seasoning. Place back on the smoker (still set to 250 degrees) for 15 to 20 more minutes.
  • Top with parsley and/or crushed red pepper flakes if desired. Serve as is, with garlic bread, over pasta, or as meatball subs.
