Smoked Lasagna Stuffed Meatballs
Smoked lasagna stuffed meatballs is a great lower carb recipe to enjoy all the yumminess of lasagna!
It’s basically most of the ingredients in traditional lasagna, but all stuffed in a meatball.
And smoked for a little extra added flavor.
This could easily be dinner served with garlic bread, or some zucchini noodles to keep it keto friendly.
Or it could be a great appetizer to serve to a crowd if you make the meatballs a little smaller in size!
How to make smoked lasagna stuffed meatballs
First set a small skillet over medium heat and add some olive oil and a diced onion.
Cook 3 to 4 minutes.
Add lots of freshly chopped spinach, kosher salt, pepper, and crushed red pepper flakes.
Cook 3 to 4 more minutes stirring a few times.
While the spinach cools put ground Italian sausage, bread crumbs, garlic, egg, ricotta cheese, kosher salt, pepper, and crushed red pepper flakes in a bowl.
I used keto friendly bread crumbs, but any bread crumbs will be just fine.
If the sausage came in casings, just remove the casings.
Once the spinach is cool add it to the bowl.
Mix together with your hands until evenly combined.
Roll 8 meatballs with your hands and place on a tray.
Then head out to the smoker or pellet grill and set it to 250 degrees.
Place the meatballs on the grates for about an hour.
You could serve them just like this, but I am going to top mine with marinara sauce and cheese.
Transfer the smoked meatballs to a dish or tray.
Then top them with marinara sauce and shredded mozzarella cheese.
If you are trying to keep this keto friendly I recommend using the Rao brand of marinara sauce, as it is lower in carbs.
Put the dish back onto the smoker still set to 250 degrees for another 20 to 30 minutes.
Top your smoked lasagna stuffed meatballs with parsley for a little pop of color if you’d like!
These are like little heavenly bundles of lasagna stuffed goodness!

Equipment

- Traeger/Pellet Grill
Ingredients
- 1 tablespoon olive oil
- 1 onion diced
- 5 to 6 ounces fresh, chopped spinach
- kosher salt, pepper, crushed red pepper flakes
- 1 pound ground Italian sausage
- 1/2 cup breadcrumbs (use low carb crumbs for keto friendly)
- 5 to 6 cloves garlic minced
- 1 egg
- 1 cup ricotta cheese
- 1 to 2 cup marinara sauce (use Rao brand for keto friendly)
- 1 cup shredded mozzarella cheese
- Optional: parsley or basil for garnish
Instructions

- Set the smoker or pellet grill to 250 degrees. Place the meatballs on the grates for about 1 hour.
- Transfer the meatballs to a tray or dish. Pour the marinara sauce over top and sprinkle the cheese over top. Place back in the smoker for 20 to 30 more minutes.
- Serve with parsley or basil over top if desired.
