Blackstone Guacamole Street Corn Chicken
I made a Street Corn Loaded Guacamole recently, and it occured to me that it would make a fabulous addition to chicken for a fun and flavorful dinner, so here is Blackstone Guacamole Streeet Corn Chicken!
My husband and I enjoyed the meal just like this, but my son cut up his chicken and made tacos with the guac and corn!
How to make Blackstone Guacamole Street Corn Chicken
First preheat your Blackstone or flat top griddle to medium.
Add some cooking oil of choice and corn kernels on one side of the griddle, and chicken on the other side.

Season both your corn and chicken with kosher salt, pepper, and your favorite taco seasoning blend.
Cook both the corn and chicken for 8 to 10 minutes, mixing and flipping a few times.

Remove chicken once it’s done.
When there’s about a minute left, fresh cilantro gets added to the corn.

Then add some mayo, sour cream, and the juice of 1 lime wedge to the corn, mix for a minute and remove.

Serve the chicken topped with guacamole and the street corn with extra lime wedges on the side.

Add additional toppings such as cotija cheese, cilantro, more taco seasoning, and/or pickled red onions to make it extra yummy and pretty.

Blackstone Guacamole Street Corn Chicken
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 3 to 4 ears corn on the cob kernels cut off of cobs
- 4 chicken breasts (mine weren't thin, but not real thick)
- kosher salt, pepper, taco seasoning of choice
- 1/2 cup fresh chopped cilantro
- 2 to 3 tablespoons mayo
- 2 to 3 tablespoons sour cream
- 1 lime cut into wedges
- 1/2 to 1 cup guacamole (store-bought or link to my homemade recipe in post above)
- Toppings of choice: cotija cheese, cilantro, more taco seasoning, pickled red onions
Instructions
