Cut the tomatoes in half and place them on a baking sheet.Note: Larger tomatoes may need to be cut into fourths.
Cut the poblano and jalapeno peppers in half and remove some or all of the seeds. Peel the onions and cut in fourths. Place on the tray with the tomatoes.
Add the whole garlic cloves to the tray and drizzle the olive oil over the veggies, season with kosher salt and pepper and toss until combined.
Set the smoker or pellet grill to 225 degrees. Place the tray with the veggies on the smoker for 2 hours, tossing a few times.
Cut most of the stems from the cilantro and add to a food processor along with the lime juice, smoked veggies, sugar, kosher salt, and pepper.Note: You may need to add half the veggies, pulse until there is more room in the food processor, and add the rest of the veggies.
Blend or pulse until the salsa is the consistency you like. Taste for seasoning and add more kosher salt and pepper if needed.
