Smoked Poblano Salsa
Holidays require extra special recipes, like this Smoked Poblano Salsa!
It was Mother’s Day, and I was NOT going to serve my beautiful mom regular, boring salsa from a jar.
No way, she is getting ONLY the BEST!
So, as I was already smoking Smoked Tequila Lime Shrimp, I also smoked the salsa veggies at the same time and temp on the smoker.
Ok, technically I know tomatoes are a fruit, but for convenience I will wrongly refer to this tray of yumminess as “veggies”.
How to make Smoked Poblano Salsa
First cut the tomatoes in half, I have 8 Roma tomatoes.
Larger tomato types you may only need 6.
Then cut some poblanos and jalapenos in half.
Remove some or all of the seeds depending on how spicy you want the salsa.
Finally some onions that have been quartered and whole garlic cloves on a baking sheet.
Drizzle some olive oil over top and season with kosher salt and pepper.
Toss until the veggies are combined and the next stop is the smoker!
I am actually using my Traeger pellet grill set to 225 degrees, with the super smoke setting on.
Let the veggies do their thing on the smoker and toss a few times.
About 2 hours total should be just perfect.
As the smoked veggies cool, add a bunch of cilantro and some lime juice to a food processor.
Then add the smoked veggies.
You may need to add some, pulse to make more room, and then add the rest.
Add some sugar, kosher salt, and pepper, and pulse or blend until it’s the consistency you like.
Taste for seasoning and add more kosher salt or pepper if needed.
Serve Smoked Poblano Salsa with chips for dipping or with tacos and quesadillas!
This salsa could easily be eaten just with a spoon it’s so darn good!

Smoked Poblano Salsa
Equipment
- Traeger/Pellet Grill
- Smoker
Ingredients
- 6 to 8 tomatoes (I used 8 Roma tomatoes)
- 2 to 3 poblano peppers
- 2 to 3 jalapeno peppers
- 2 onions
- 4 to 5 cloves garlic
- olive oil, kosher salt, pepper
- 1 bunch cilantro
- 3 tablespoons lime juice
- 1 to 2 tsps sugar
Instructions
- Cut the tomatoes in half and place them on a baking sheet.Note: Larger tomatoes may need to be cut into fourths.
- Cut the poblano and jalapeno peppers in half and remove some or all of the seeds. Peel the onions and cut in fourths. Place on the tray with the tomatoes.
- Add the whole garlic cloves to the tray and drizzle the olive oil over the veggies, season with kosher salt and pepper and toss until combined.
- Set the smoker or pellet grill to 225 degrees. Place the tray with the veggies on the smoker for 2 hours, tossing a few times.
- Cut most of the stems from the cilantro and add to a food processor along with the lime juice, smoked veggies, sugar, kosher salt, and pepper.Note: You may need to add half the veggies, pulse until there is more room in the food processor, and add the rest of the veggies.
- Blend or pulse until the salsa is the consistency you like. Taste for seasoning and add more kosher salt and pepper if needed.
