Preheat the griddle to medium heat for several minutes. Use kitchen scissors to cut the bacon into bite size pieces right on the griddle. Cook 3 to 4 minutes, stirring and flipping with hibachi spatulas a few times.Note: Use the hibachi spatulas to separate any pieces of bacon that are sticking together.
Add the onion, brussel sprouts, kosher salt, pepper, and crushed red pepper flakes. Cook 6 to 8 minutes, flipping with the spatulas a few times.
Add the dried cranberries and honey. Cook another minute or two. Serve with goat cheese or feta cheese crumbles over top. Taste for seasoning and add more kosher salt and pepper if needed.
