Instructions
Pat the ribs dry with a paper towel, and season all sides with BBQ seasoning or your seasoning blend (add kosher salt and pepper if it's a salt free rub).
Place the ribs in a smoker or pellet grill set to 225 degrees for 3 hours.
Wrap each rib in foil and add 2 Tbsps water or beer to each foil packet. Place the foil wrapped ribs back into the smoker for 2 more hours.Note: Heat resistant gloves and a rib wrapping buddy makes this process go a little smoother.
Put the ketchup, Cherry Coke, brown sugar, Worcestershire sauce, lime juice, kosher salt, pepper, and crushed red pepper flakes in a saucepan. Bring to a boil and reduce the heat to simmer 15 to 20 minutes, stirring a few times. It will thicken as it cooks.Note: Watch carefully as this comes to a boil, if it bubbles up remove from heat for a moment.
Unwrap the ribs, place back on the smoker for 1 more hour, brushing with the Cherry Coke sauce periodically. Serve with any leftover sauce.
