- 1/2 cup mayo
- 1/2 cup sweet Thai chili sauce
- 2 to 3 tablespoons sriracha
- 1 tablespoon lemon juice
- cooking oil of choice
- 6 to 8 cups cooked and cooled Jasmine rice
- 3 eggs
- 1 onion diced
- 1 pound boneless skinless chicken (breasts or thighs) cut into bite size pieces
- kosher salt, pepper
- 6 to 7 cloves garlic minced
- 1/2 cup soy sauce
- 1 bunch green onions sliced
Put the mayo, sweet Thai chili sauce, sriracha, and lemon juice in a bowl, stir until combined to make the bang bang sauce.
Prepare all of the ingredients, put them on a tray, and head out to the griddle. Preheat the griddle to medium high for a few minutes.
Add some cooking oil of choice. Put the cooked rice on one side of the griddle and crack the eggs over the rice. Put the onion, chicken, and kosher salt, and pepper on the other side of the griddle.
Mix the rice and eggs together, and mix the onion and chicken together… but keep them separate on the griddle. Cook both 5 to 7 minutes, then mix them all together with hibachi spatulas.
Add the garlic, soy sauce, green onions, and half of the bang sauce sauce. Mix everything together on the griddle and cook 5 to 7 minutes. Spread the rice flat and press down a few times for a crispier rice texture.
Serve with the remaining bang bang sauce on the side or drizzle over top.
